I LOVE these fritters!!! These little patties of yumminess can be served as an appetizer or finger food, they can be served as a snack for your kids, they can be a side dish to your entrée, or serve them with a salad and have them be the entrée. This recipe is originally from Taste of Home and I’m obsessed with these savory little treats.
Shred the zucchini and put it in a colander to drain. This step is very important – Use paper towels to pat the zucchini dry.

Mix the bread crumbs, seafood seasoning, and garlic powder in a large bowl. Next add the egg and melted butter. It will form a paste like mixture.

Add the carrots, onions and zucchini to the paste mixture.

Mix well!

Form the mixture into small patties about the size of a silver dollar and dredge in flour.


Fry them in oil over medium high heat for 3-4 minutes per side. Drain on paper towels.

You can serve them with ranch dressing if you like, but I think they are so tasty, I always eat them plain!
Ingredients
2 1/2 cups shredded zucchini, patted dry
1 cup seasoned bread crumbs
1 tsp seafood seasoning
1/4 tsp garlic powder
1 egg, lightly beaten
2 Tbsp butter, melted
1 large carrot shredded
1/4 cup finely chopped onion
Flour for dredging
3 Tbsp oil
Instructions
Place shredded zucchini in a colander. Squeeze or press the zucchini to release liquid. Pat the zucchini dry with paper towels.
In a large bowl, mix the bread crumbs, seafood seasoning and garlic powder. Add the egg and melted butter. Mix until a paste forms. Add the carrot, onion and zucchini. Mix well.
Place flour in a shallow bowl or pie plate. Shape zucchini mixture into 24 small patties; dredge in flour.
Heat oil in large skillet. Fry patties in batches over medium high heat for 3-4 minutes per side or until lightly browned. Drain on paper towels. Serve immediately.
