Who says cocktails are just for parties? It’s summer! I believe that we should enjoy the bounty of summer in all forms of cooking and baking, so why not in a cocktail too? There’s no reason that we can’t take ten minutes out of our evening to make ourselves a fun, fruity cocktail. What a great weeknight treat.
Combine mint leaves, blueberries, lime juice and sugar in a tall glass. Don’t judge my cat glasses. I don’t have any tall glasses without some sort of art on them.

With either a muddler or a spoon, crush all the ingredients together until the sugar is dissolved and the berries and mint are mashed.

Fill the glass halfway with ice, add rum and club soda. Give it a stir and drink up. Cheers!

Ingredients
16 large or 20-24 small fresh mint leaves
1/2 cup blueberries
1/2 of a lime
8 tsp superfine granulated sugar
Ice
6 Tbsp light rum
1 cup club soda
Instructions
In two tall glasses, divide the mint leaves, putting half in each glass. Add 1/4 cup of blueberries into each glass. Cut the half lime in half again so that you have two quarters. Squeeze a quarter lime into each glass. Add 4 tsp of superfine sugar to each glass.
Mash the ingredients together using a muddler or the back of a spoon until the sugar is dissolved and the berries and mint are crushed.
Fill the glasses halfway full with ice. Add 3 Tbsp of rum to each glass. Pour 1/2 cup of club soda into each glass. Stir and serve immediately.
